That'd be the perfect way to ruin the game.

If you want to replace an item with another model you would have to make one first and then convert it into a display list, and then put it at the end of young/adult Link's file, and then swap a few offsets. But that could turn out to be hard depending on your experience. I advise doing baby-steps first and read Sanguinetti's tutorial on D-Lists. I can't give you any info on making a completely new one tho, sorry for that.
